I might be running out of this Finnish emojis, at least the quality ones, but since local cuisine has been quite a hot debate during the Challenge, I decided to throw something from Finland in to the mix. Yes, it is not Thor's Tart, but the topic sounds nice - at least in my Finnish ear... Joulutorttu translates to "Christmas Tart" and usually you buy the ready made frozen dough "plates" from the local store. You cut them in half, make some cuts on the corners, add plum jam in the middle and then turn every second corner to the middle and put them in the oven. And when it is ready, you might sprinkle some powdered sugar on top of it and eat. Then you burn your mouth, because the jam is so hot. There are some variations, you can make the cuts in different ways or you can use apple jam or some marmelade instead of plum jam. You still burn your mouth, though. A lot of these are eaten during winter, especially around Christmas.

The ‘joulutorttu’, a Christmas pastry, is served every Christmas, everywhere. Every year you burn your mouth on the first one – beware of the plum jam in the middle! The sweet taste and nostalgia make up for it.

P.S. Temperature is now at 0 degrees, no wind or rain or snow, but the coming night will get as to -12 again. Weather has been a rollercoaster here, everything from -20 to +5, strong winds, snow and rain during the last week...
